Low FODMAP Crock Pot Indian “Butter” Chicken

This is a “Mock” Butter Chicken because I made this recipe up one day, and after I ate it, it reminded me a lot of Butter Chicken so that’s what my husband and I started calling it.  It’s really similar, though.  Just no butter!

It is sooo easy, but so good!  Using a  slow cooker or crock pot is one of my favorite ways to cook!

I spent the summer in India in 2011, and I really love the flavors that are kick’n in this dish.  It’s not a wimpy curry like so many American Indian dishes.  But it’s also very adaptable.  If you like authentic Indian cuisine’s spicy-ness, you’ll like this, if you don’t, you can try my adapted recipe on the bottom.

Spicy Version:

~ 1 pound of chicken breasts, cut into 2 inch pieces (I had 17 oz. on hand)

1 (14.5 oz) can of diced tomatoes

1 T. Curry Powder*

1 T. Garam Masala*

1 t. salt

1/2 t. Asafoetida Powder (“Hing”)

1/4 t. cinnamon

1/8 t. ground red pepper (cayenne)

1/4 cup sour cream (or cream, half & half, yogurt, etc.)

  1. Add all the ingredients (except for the sour cream) into a mini food processor, grind until blended.  Taste to see if you want to make any alterations.
  2. Add spice mixture to crock pot.
  3. Add chicken pieces.  Cover.
  4. Cook on LOW for 1 hour and 45 minutes (or until chicken is cooked through but not hard!)
  5. Add cream, stir.  Serve with Basmatti Rice.

*Curry Powder: a blend of turmeric, fenugreek, coriander, mustard flour, cumin, gingerroot, black pepper, allspice, cayenne, and fennel.  It is not an authentic Indian spice, it’s created by Americans to mimic Indian flavor.  It’s an OK staple in a kitchen that wants to experiment with Indian cooking.  I bought it before I went to India and got my spice legs.  ;o)

*Garam Masala: an Indian blend of cumin, black pepper, coriander, cardamom seeds, cloves, nutmeg, cinnamon, ginger, bay leaf, caraway, and mace.  They do use this spice mix in authentic Indian cooking.  You should be able to find it in basic grocery stores, if not look for an Indian Grocer.

Less Spicy Version

1 (14.5 oz) can of diced tomatoes

1 – 2 t. Curry Powder

1 – 2 t. Garam Masala

1 t. salt

1/2 t. Asafoetida Powder (“Hing”)

1/4 t. cinnamon

1/8 t. ground red pepper (cayenne)

1/2 cup sour cream (or cream, half & half, yogurt, etc.)
