Low Fodmap: Spinach, Potato, and Ham Soup

Easter Leftovers!  …hm, now that I can’t eat legumes, what am I going to do with all this ham?  Normally I make bean or split pea soup.  Don’t worry, I came up with something. =)

6-7 cups diced russet potato

5-6 cups baby spinach

3 cups Water

2 cups Homemade low-fodmap Chicken stock/broth

2 cups diced Ham

salt & pepper

Put stock and water in a large pot, add spinach, let wilt for 2-3 minutes.  Add potatoes, cook for about 45 minutes.  Add chopped ham, season to taste.  The soup is done with the potatoes are easily smooshed when pressed against the side of the pot with a wooden spoon (I think it took mine 1.5 hours).  You could also make this in a crcok pot and cook it on low for 6-8 hours, until the potato is soft.
