Ashley’s (very) Vanilla Chunky Granola

I had a craving for granola with my yogurt today so I decided to make some from what I had lying in my pantry.  This is what I came up with and I really like it!

2 cups old-fashioned oats

1/2 c. flaked sweetened coconut (or unsweetened, if you prefer)

1/2 c. chopped pecans

1/4 c. ground flaxseed meal

1/4 c. canola oil

3 T. honey

3 T. brown sugar

1 T. water

1 t. real vanilla extract

1 egg, beaten

1/4 raisins

3/4 t. salt

1/2 t. cinnamon

Mix it all together.  Line a cookie sheet with tin foil.  Press Granola evenly onto cookie sheet.  Sprinkle some sea salt on top, if you like.  Bake at 260-275 degrees (depending on how hot your oven gets) for 35-40 minutes.  Remove from oven, fold up the sides of the foil to cover the browned edges of the granola.  Return to oven for 15-20 more minutes.  Remove when oatmeal looks evenly browned.  In order to achieve chunky granola, LET REST to cool completely before stirring or breaking up the granola.  If you don’t want it to be chunky, stir it every 15 minutes while baking. Enjoy!  Makes 5 chunky cups, or 10 servings of 1/2 cup.
