My Red Beans & Rice – meatless!
1 cup uncooked Brown Rice
1 can red beans
1 medium onion, chopped finely
4 garlic cloves, minced
1 medium green/yellow bell pepper, chopped
1/2 t. salt
1/4 t. cumin
1/8 t. ground red pepper
1/8 t. black pepper
1/4 cup mango salsa, optional but recommended
Prepare brown rice. (20 minutes of soaking, 35 more minutes of cooking)
Chop onion, garlic, and pepper, cook together. Add spices after 7 minutes. Add beans, heat through. Reduce heat, add brown rice and mango salsa.
Use as a bed for Jerk Chicken. We used Lawry’s Carribean Jerk 30 minute marinade and really liked it. The mango added a nice sweetness that was a good escape from the heat. We ate it with grilled bok choy, marinated for 15 minutes in a dash of soy sauce, and roasted garlic olive oil (about 1 or 2 cloves). Yummy! Kyle really liked it.
