My Mango Salsa

1 Mango, chopped
3 T. Cilantro, minced
1 small onion, finely chopped
3 T. Honey
1/4 cup lemon or lime juice
Salt & Pepper
1-2 cloves garlic

First, chop the onion and let it sit in the lemon juice while you prepare everything else (this will bring down the sharpness of the raw onion.)

Prepare everything else and mix it all together.  Let sit for 20 minutes before serving for best results.

Note:  If the Mango is a little gritty or under-ripe, cook it together with the fish in a aluminum foil pocket.
