Grilled Bok Choy

2 small heads of bok choy

1/4 cup soy sauce

2 T. olive oil

Salt & Pepper

1 t. dried ginger, optional

Chop bok choy into quarters, trying to keep the bulb in tact as much as possible so that the leaves don’t fall off each quarter.  Combine last 4 ingredients in a ziploc bag, squish around to mix.  Add bok choy quarters to bag, mix around to coat bok choy.  Let sit in the fridge for 15-20 minutes.  Lay onto a cookie sheet, place under broiler until browned.  You might need to flip them.  Or grill them on a cast iron grill or your outdoor grill.  Hint: get a good singe on them, it tastes great when they are browned.
