Soaked Bread, try 1,001

Edit Aug 15, 2010:  This bread did not turn out as I hoped.  I will keep trying!

I think I am going to try this recipe for soaked bread.  I tried Passionate Homemaking’s and really liked it.  It sank in the middle, but I attribute that to my poor measurement (I zoned out a bit while baking).  I would do it again but I want a bread that will fall in line with my weight watchers, being 1 point a slice.  I found this recipe, and I hope it works!   http://www.healthbanquet.com/homemade-bread.html

2 cups lukewarm water
2 2/3 cups of fresh ground whole wheat flour to begin with (might need to add more later)
>2 1/4 TBS. raw apple cider vinegar (I prefer the Bragg brand)
2/3 TBS. active dry yeast (I use Saf Instant Yeast)
2/3 TBS. sea salt (I prefer the fine ground Celtic Sea Salt)
<1/4 c. olive oil (melted butter or unrefined, non-hydrogenated coconut oil is fine too)
<1/4 c. cup honey
