Microwave Chocolate Cake

One night I had a chocolate cake craving but I didn’t have any cake mix, and I have been on weight watchers, so I didn’t want to use up too many points.  So I adapted a Chocolate Cake recipe to be lower in calories and fat and higher in fiber.  I like it best with a drizzle of brown sugar syrup over the top!  Give it a try

1/4 c.  Cocoa
2/3 c.  hot water 
3/4 c. + 2 T.  whole grain flour
1 c.  sugar substitute (I use Ideal)
1/2 t.  baking soda
1/4 t.  baking powder
1/4 t.  salt
1/4 c. + 2 T.  mashed banana 
1 egg (substitute with 1 T. flax + 3 T. water, soaked for 2 min.)
2 t. vanilla extract

Mix cocoa with 1/3 cup water, microwave 40-50 seconds.  In medium bowl combine flour, sugar, soda, powder, salt.  Add mashed banana, remaining 1/3 cup water, “egg”, vanilla, and chocolate mixture.  Microwave for 7 mins.  Let rest 2 min. before cutting. Makes 4 servings, each serving is 2 WW points.

For brown sugar syrup, mix & drizzle on top of your 1/4 of cake:
1 t.  brown sugar
1/4 t. milk
